The Healthy Potato

Potatoes can be a great addition to any healthy diet. Turning a potato into a greasy, salty chip? Not so healthy. How can you eat your spud and save your waist? Ta-Da! Healthy, quick, and easy... home-made potato chips.  Potatoes are one of the most potassium-rich foods and with the skin on, they are very high in fiber. 

Wash potatoes, slice them thinly, lightly drizzle olive oil on and sprinkle sea salt and pepper.

Put them in a pre-heated oven set at 425 degrees for about 40 minutes. 

Other healthy toppings: cooked broccoli, low-fat cheese, plain greek yogurt and chives.
